Instructions to Use

PANCAKE USING SPROUTED FOXTAIL MILLET FLOUR


Ingredients:

  • 1 cup sprouted millet flour
  • 1/2 teaspoon baking powder
  • 1/2 tablespoon sugar or jaggery or ripened bananas
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup milk of your choice (dairy or plant-based)
  • 1 tablespoon lemon juice
  • 2 eggs (optional)

Instructions:

  1. In one bowl, whisk together the milk and lemon juice. Let it sit for 3 minutes, allowing the milk to thicken slightly.
  2. In a separate bowl, combine the sprouted millet flour, baking powder, sugar (if using), cinnamon, and salt.
  3. Add the eggs and oil to the milk mixture and whisk well.
  4. Gradually whisk the wet ingredients into the dry ingredients until just combined. A few lumps are okay.
  5. Let the batter rest for 5-10 minutes while you preheat a pan or griddle over medium heat.
  6. Grease the pan with a little butter or oil.
  7. Pour about ¼ cup of batter per pancake onto the pan.
  8. Cook for 2-3 minutes per side, or until golden brown and cooked through. Look for bubbles appearing on the surface of the pancake as a sign to flip.
